"The book you are holding exudes the
vitality and poetry of Hiro Sone and Lissa Doumani. Just looking at
the gorgeous photographs is not enough. You must take this book into
the kitchen and begin cooking. Only then will you be able to experience
the sheer brilliance and genuine passion of Hiro and Lissa's cuisine."

"Cooking with fresh, local ingredients in Napa Valley is what
makes Hiro and Lissa's food so delicious, but it is the diversity
of the recipes that makes this book so accessible and inviting."
Alice Waters
"Hiro and Lissa's Terra restaurant is a culinary haven in the
Napa Valley, and with this book, we are very fortunate that they share
their passion, technique, and love for food with all of us."

Just over a decade ago, Spago-trained chefs
Hiro Sone and Lissa Doumani traded in their high-profile jobs at two
top Los Angeles restaurants for the once-in-a-lifetime chance to create
the first world-class restaurant in the charming town of St. Helena,
nestled in the heart of the Napa Valley. They christened the restaurant
Terra, in tribute to the very earth from which all of Napa's greatest
gifts arise. Word spread quickly about the duo's extraordinary cooking
and hospitality, and Terra, from its home in a century-old fieldstone
foundry, became known as the quintessential Napa dining experience.
In Terra, over 175 recipes from the restaurant's standing
and seasonal menus showcase the chefs' sophisticated, yet eminently
playful and deeply personal cuisine. Their eclectic repertoire can
be loosely characterized as Southern French and Northern Italian
with a Japanese sensibility--but as the products of Hiro's and Lissa's
heritages, travels, memories, and individual tastes, these harmoniously
balanced dishes are best described as autobiographical. In TERRA,
Hiro and Lissa present their favorite appetizers, soups, salads,
entrees, desserts, and more. |
